I have so many favorite recipes ~ but here is my very favorite recipe that utilitzes one of the items we have gotten in our last two baskets (the good thing about squash is it lasts a while when stored properly, so I am saving mine up for the big T-day!!):
Ingredients
- Organic Delicatta Squash (no need to peel it)
- Craisins, organic cranberries and/or organic raisins
- Walnuts
- Pure maple syrup (Vermont maple syrup is the best
Instructions
- Delicatta squash (no need to peel it) ~ wash well and slice in half lengthwise, scoop out seeds, slice the rest about 1/2″ thick.
- Put in baking dish add a bit of water, add craisins, cranberries and/or raisins and chopped up walnuts, drizzle pure maple syrup over it (Vermont maple syrup is the best
- Cover with tin foil and bake at 325 for about 35 to 45 minutes or until soft (not soggy).
Quick Notes
Delacotta Squash cooks up a bit quicker than most other fall squashes and the skin us thinner. When done baking, mix it up and serve warm, and enjoy ~ it is soooo yummy!!! ~ Happy Thanksgiving ~ Jay ~:
