Organic Green Beans with Toasted Almond Gremolata

Summary: A great fall dish

Ingredients

  • 1 lb. organic green beans, trimmed
  • 1-1/2 tsp. fresh organic lemon juice
  • 2 Tbs. chopped fresh organic flat-leaf Italian parsley
  • 1 tsp. organic olive oil
  • 2 Tbs. sliced organic almonds, toasted
  • 1/4 tsp. salt 1/8 tsp. freshly ground black pepper
  • 1 organic garlic clove, minced
  • 1/4 tsp. grated lemon rind

Instructions

  1. Toast the almonds, and assemble other ingredients so they are ready when the beans are.
  2. Steam beans, covered, 6 minutes or until crisp-tender. Drain and return to pan.
  3. Add parsley and all remaining ingredients; toss gently to combine. Serve immediately.
