Ingredients
- 1 head organic red cabbage
- 1 organic medium red beet
- 1 organic red onion
- 1organic red apple, any seasonal variety (e.g. Delicious, Empire or Braeburn)
- 1 cup organic apple cider vinegar (raw unfiltered is best)
Instructions
- Wash solid ingredients well. Peel the beet if desired. Remove apple core and seeds. Medium slice the cabbage, beet, onion and apple using a sharp knife, grater or food processor. Place ingredients in large mixing bowl or salad bowl. Toss well. Add the apple cider vinegar and toss until thoroughly blended. Marinate in refrigerator 4-6 hours or overnight. Makes about at least 4 portions.

Variations
Adjust the proportions and quantities of the ingredients to suit your taste and needs. Shredded or fine slicing creates a slaw type condiment. Medium or thick makes a great lunch or dinner side dish. Add sliced organic red radishes for a spicier taste or sliced organic red pepper for a sweeter taste.
