Yoav Salad

Since I like to have some fresh veggies but not a full salad that takes up too much room I make what I call a Yoav Salad. Yoav is the Israeli husband of my sister-in-law’s best friend (who eats this with nearly every meal) and she brought the salad to a picnic once. I’ve been a big fan of it every since…

Ingredients

  • 2 Large Organic Cucumbers
  • 4 Organic Roma Tomatoes (or whatever tomatoes you like)
  • 1 Bundle of Organic Green Onions
  • Organic Cilantro to taste
  • 1/2 of a Organic Fresh Lemon
  • Dash of Organic Olive Oil

Instructions

  1. Chop all ingredients except lemon. Squeeze in the lemon and add a dash or two of olive oil. Stir.
  2. Add or subtract ingredients to your taste.

Super simple, super fresh tasting addition to usually heavy overload of holiday eats!
